Arugula Salad with Lemon – Parmesan Vinaigrette
Here I present my recipe for an Arugula Salad with Lemon – Parmesan Vinaigrette – read on to learn how it comes together!
This is an authentic Italian recipe, in fact I’m probably using too many ingredients in the vinaigrette. Usually in a “dish” like this all that normally happens is a squeeze of a lemon 🍋
I happen to know for a fact that in North America our concept of Italian food is very different from what you get in Italy. I know this because I’ve been to Italy and my father is Italian. I’ve kind of just gotten use to calling it Italian-Italian or American-Italian.
I wonder what else has loved from its original roots… Chinese, Indian, Mexican? I have no idea 🤷♀️ Apparently I should travel more but honestly after covid – I don’t want to leave Canada 🇨🇦.
Ooooh, I’m feeling inspired. I’m going to start looking to other Cultures for inspiration for more recipes. My kids are old enough to start to appreciate new tastes and spices. I love Indian food but now I’m wondering if its actually Indian food 🤔 It’s probably American-Indian, delicious though 🙂
Back to my Arugula Salad with Lemon – Parmesan Vinaigrette…
This is how you make it
Whisk the oil, vinegar, lemon juice, Dijon Mustard, parmesan, garlic powder, salt and pepper together or combine in a jar – shake well.
Pour over the fresh arugula and mix well.
Garnish with Parmesan cheese.
Measure that amount with your heart 🙂
Serve immediately!
So what is Arugula?
Sometimes referred to as “Rocket Lettuce”, its a leaf that is in the same family as mustard. It’s super peppery and tart.
What else can I use Arugula for?
A popular garnish for a homemade pizzas to lightly toss arugula with extra virgin olive oil, lemon juice, salt and pepper… then top the pizza with it.
Can I use a different lettuce?
Yes but it won’t be an Arugula Salad 🤣🤣🤣. In all seriousness, this is a strong salad even though its a mild vinaigrette. It might be best to mix arugula with a light spring mix or even buttery Boston lettuce.

1/4 Cup extra virgin olive oil
