Chicken Taco Salad

My mother bought me one of the pioneer woman’s cook books.  Honestly as I sit here writing this I realize should know which book it is, but I don’t 🤷‍♀️

It has her picture on it if that helps.  Anyway I was looking through it and came across her taco salad.  Totally inspired this taco salad but dare I say this Taco Salad is better!?!  Is that too bold?  My horoscope said to be bold this week 🤗

This is how you make my Taco Salad (I’m sure Ree’s is really good too though.  Did you notice I called her by her first name???  Bold 😎)

This is how you make it:

Preheat your oven to 425

Season the raw chicken breast on both sides evenly with the taco seasoning then bake for 45 minutes.

Preheat a frying pan over high, add oil and when it ripples add in the peppers and onion; season with salt and pepper.

Sauté on high, shaking the pan often.  You’re looking for charred (yummy) spots.

Set the veggies aside.

Mix the ranch dressing and salsa together to make the dressing, set aside.

Rest the chicken for 10 minutes then chop it up.

Layer the lettuce in a large bowl or serving platter.  Add the cheese, peppers and onions (and yummy juices), chicken pieces, corn, tomatoes and the green onion.

Top with some dressing!

Description

A healthy recipe with everything you love about chicken tacos in a salad; sautéd peppers and onion with perfectly roasted chicken piled high on crisp lettuce with fresh tomatoes and grated cheese.


Ingredients

Scale

453 g chicken breast

1 tbsp taco seasoning

Salt, to taste

Pepper, to taste

1 red pepper, sliced

1 onion sliced

1 tsp olive oil

1/2 cup ranch

1/4 cup salsa

1 head of romaine lettuce, clean and shredded

1 cup frozen corn kernels, thawed

1 cup grated old cheddar cheese

3 tomatoes, chopped

3 green onions, sliced
