Moroccan Fettuccine with Grilled Chicken 

Do you ever just sit there watching the birds fly by or leaves blowing or anything.  Just sitting there not really thinking about anything in particular and then, boom 🤯- you get an idea!??

That’s what happened when I came up with this recipe.  It’s inspired by a pasta dish I used to order in a restaurant I worked in, many, many, many moons ago.

Its a cream sauce – based pasta dish that’s seasoned with curry powder.  A great time saving trick: always use jarred Alfredo in place of a homemade cream sauce.  It’s less fat and calories, it’s delicious, more affordable and it’s just to open a jar!!!

Cook the pasta according to package directions.

Just before straining, reserve a 1/2 cup of the starchy cooking water.

Return the empty pot that you cooked the pasta in and add the Alfredo sauce.

Add the reserved pasta water to the empty jar, put the lid on it and shake the jar to release any sauce residue; add this to the pasta pot.

Add in the curry powder and then mix well.

Add the cooked chicken to the sauce to warm through (about 1-2 minutes).

Add the cooked pasta and mix well.

Serve immediately – with parmesan cheese – optional!

Description

An ooey – gooey Alfredo sauce, seasoned with curry powder. This pasta dish is spicy and decadent and comes together in under 20 minutes 🙂


Ingredients

Scale

1 x 410 g Box of Fettuccine, cooked according to package directions

1 x 410 ml jar of Alfredo Sauce

1/2 cup of the pasta cooking water 

1 tbsp curry powder

2 Bbq chicken breasts, sliced thinly


Instructions

Cook the pasta according to package directions.

Just before straining, reserve a 1/2 cup of the starchy cooking water.

Return the empty pot that you cooked the pasta in and add the Alfredo sauce.

Add the reserved pasta water to the empty jar, put the lid on it and shake the jar to release any sauce residue; add this to the pasta pot.

Add in the curry powder and then mix well.

Add the cooked chicken to the sauce to warm through (about 1-2 minutes).

Add the cooked pasta and mix well.

Serve immediately – with parmesan cheese – optional!

Notes

  1. The chicken can cooked ahead of time.  I’ll cook extra chicken breasts when we BBQ then I’ll throw them in the freezer,
  2.  Go with any pasta you have on hand.
