Lazy Cheesy-Broccoli Potatoes

Do you ever crave potatoes?  Stick-to-your-ribs, piping hot potatoes?

Do you ever crave Cheesy stick-to-your-ribs, piping hot potatoes?

Remember, potatoes aren’t bad; it’s what we do to them that matters!

Lazy Cheesy-Broccoli Potatoes

Description

Do you ever crave potatoes?  Stick-to-your-ribs, piping hot potatoes?  Do you ever crave Cheesy stick-to-your-ribs, piping hot potatoes?  I do.  And…. you’re welcome!!!  Lol!  Remember, potatoes aren’t bad; it’s what we do to them that matters!


Ingredients

Scale

1 Head of broccoli, florets only

1 Cup milk (I used 1%), divided

2 tbsp whole wheat flour

1 tsp Dijon mustard

½ Cup grated old cheddar, plus more for garnish

Salt

Pepper

4 Medium-large russet potatoes with skin on, cooked and then sliced into ¾ inch slices

1 tbsp extra virgin olive oil

Coarse salt


Instructions

Bring a pot of water to boil and add some salt; once boiling, steam the broccoli for 5 minutes then strain and set aside.

Bring ¾ Cup of milk to a boil, meanwhile whisk the remaining ¼ cup of milk and flour together until smoothe (this is the slurry).

Add the slurry to the milk once it has come to a boil and once the milk has thickened add the Dijon mustard and mix well.

Stir in the cheddar and once it is completely melted, add the broccoli to the cheese sauce.

Taste and adjust seasoning on the sauce.

Preheat your oven to broil (on high).

Drizzle the olive oil across the bottom of a nonstick baking sheet and then throw a pinch of coarse salt evenly across the pan.

Coat the (cooked) potato slices in the oil and salt and broil the edges of the potatoes are slightly charred (about 2-3 minutes). Make sure you stay with the potatoes while they’re under the broiler because they can burn really quickly.

Top with the yummy-gooey cheese sauce.

Then top with the reserved grated cheddar for garnish

Serve immediately!

Notes

  1. I cooked my potatoes in the microwave, just pressed the ‘potato’ button 4 times for 4 potatoes!
  2. This would be a great way to use up leftover potatoes.
  3. I cooked my broccoli a little longer last time and it was amazing!
  • Prep Time: 5 minutes
  • Cook Time: 10 minutes
