End of Summer Marinade
No doubt your herb gardens are as abundant as mine this time of year and I simply couldn’t resist dipping into each one ☺ This recipe is inspired by all of the cottage barbecue’s I’ve been to over the years. There is nothing like a big barbecue out in the country air, next to the fire pit as the sun sets; if I concentrate, I can still smell the fire.

No doubt your herb gardens are as abundant as mine this time of year and I simply couldn’t resist dipping into each one ☺ This healthy marinade recipe for all of your favourite proteins is inspired by all of the cottage barbecue’s I’ve been to over the years. There is nothing like a big barbecue out in the country air, next to the fire pit as the sun sets; if I concentrate, I can still smell the fire!
Ingredients
¼ Cup extra virgin olive oil
2 tbsp balsamic vinegar
Zest of half a lemon
Juice of ½ a lemon
3 Cloves garlic, crushed
1 tsp Worcestershire
1 tsp salt
½ tsp pepper
A large handful of your favourite fresh herbs (I went with sage, thyme, rosemary, parsley and basil
Instructions
Whisk all ingredients together and cover your protein of choice for at least an hour, up to 24 hours.
I used half chicken and half steak, you CANNOT put the same meat in the same dish, so I simply poured half the marinade into 2 separate dishes.
