Retro Mashed Potato Salad

Here I present my recipe for Retro Mashed potato Salad, serve it hot or cold – you’ll love it any and all ways.

We are in the midst of the most glorious of seasons… BBQ season!

Just kidding! It’s summer. I love summer, I love hot!!! Hate air conditioning 🤦‍♀️

In our traditional Canadian household we bbq year round. I have pictures of mike in a blizzard bbqing with a forehead flashlight our friends gave us. I am not allowed to share those photos though.

You can never have enough salad recipes

This recipe is inspired by one Mike’s mother makes but also inspired by my kitchen aide stand mixer that makes THE most amazing mashed potatoes. Gone are the days this girl uses a regular potato masher… that’s actually not true… I’ll use the potato masher but I do like the stand mixer for mashed potatoes!

This recipe is also inspired by the salads you see in the grocery store.

Straight up retro. Classics exist for a reason.

Add the potatoes to a large pot and cover with two inches of water, bring it to a boil then drop to a simmer until the potatoes are fork-tender.

Combine the miracle whip, vinegar, pickle juice, sugar, salt and pepper in the bowl of your stand mixer (or any bowl if you’re using a hand mixer).

Drain the potatoes and add them to the dressing in the bowl (still very hot).

Use the paddle attachment of your stand mixer, start at mix – anymore will make the food go flying (trust me!).

Mix until completely smooth.

Fold in the celery.

Description

A creamy, dreamy mashed potato salad straight out of the history books – classics are a classic for a reason!


Ingredients

Scale

6–8 Red and white potatoes, scrubbed clean

1/2 Cup Miracle Whip

2 tbsp White Vinegar

2 tbsp pickle juice

1 tsp sugar

1/2 tsp salt

1/4 tsp pepper

1 stalk of Celery 

1 Can of mixed veggies, drained

Fold in the celery.

Taste and adjust seasoning.

  1. Go with any potatoes you have on hand; about 3 pounds.
