    My Top 10 Casseroles to Welcome Autumn

  1. Tuna (Noodle) Casserole – I must sound like a broken record; I hadn’t had a tuna casserole before either and yes, I’ve been missing out. This is a warm hug for your soul! With that said I must mention that Mike hates tuna (and all fish), absolutely detests it but he liked this casserole, he even had seconds.   This is a great pantry dish; one we’ll definitely have again… Get the Recipe Here    healthy tuna casserole
  2. Scalloped Potatoes with Broccoli – This is a dish that always used to intimidate me! Now I say with much confidence; this is awesome and super simple. I’ve also lightened it up by using milk and flour instead of butter and cream… Get the Recipe Here healthy scalloped potatoes
  3. Sausage and Alfredo Skillet Lasagna with Fresh Spinach – Is there anything in life better than pasta?  I mean, rich, meaty, cheesy, creamy, hearty, baked pasta??Cheeeeeeeesy….  bubbling hot deliciousness…. Shepherd’s Pie – Believe it or not but I had never eaten Sheherd’s Pie (nor Cottage Pie which I learned is what we in North America refer to Shepherd’s Pie as; traditional Shepherd’s Pie is made with lamb and Cottage Pie is made with beef) but I wanted to.  Then one day my friend asked me if I had a recipe for it and sadly, I didn’t.  Enough procrastinating I thought to myself and I set out to come up with an incredibly delicious, healthy Shepherd’s (err, Cottage) Pie.  This is what I came up with, I hope you enjoy it as much as I did… Get the Recipe Here Shepherd's Pie
  5. Hearty Chicken & Noodle Casserole – I  must admit, casseroles were not a regular item on my family’s table growing up. In fact, I think the first casserole I had ever had was my Lightened up, Baked Macaroni and Cheese. Mike on the other hand, is 5 or 6 generations Canadian and he said he had many casseroles growing up. Brussels Sprouts Gratin – Thanksgiving is around the corner and this will definitely be on our table.   Be sure to check out My Surviving the Holiday Dinner Guide where I show you our family menu and walk you through tying all the items altogether, including sharing oven space and when to go shopping. This dish is a gratin, characterized by cream and butter with a crispy topping, I’ve got all of these ingredients but you won’t feel weighed down or guilty! Chili Noodle Bake – We’ve all been there; leftovers.   What to do, what to do?  Well, here I took the remaining chili we had leftover and I transformed it I to something amazing!!!  Really though the reason I had to transform the dinner is because there wasn’t enough chili leftover to eat as a meal so I had to stretch it out with something else and alas, Chili Noodle Bake was born (and delicious!)… Get the Recipe Here chili bake
  8. Everyday Noodle Bake – This is a recipe I almost didn’t write because I wasn’t sure it constituted a recipe but I have come back to it a few times lately and find myself talking about it quite a but so I figured; it’s a recipe! This is just a way to switch up everyday spaghetti and meat sauce (not there is anything wrong with that!), similar in taste to lasagna with a lot less effort… Get the Recipe Here healthy baked pasta
  9. Skillet Lasagna – This dish is for everyone who loves lasagna as much as I do but usually craves it after a really long day at work.   Here, this is low fat, healthy lasagna that will be on the table in under 45 minutes, dare I say about 30 minutes????… Get the Recipe Here Healthy Lasagna
  10. Skillet Goulash, Canadian Style – I find myself obsessed with homemade casseroles; they’re delicious, soul-warming and are fantastic as a make-a-head.
