Here I present a recipe for a Red Wine Shallot Vinaigrette with Honey, its sweet and tangy with a little crunch – perfect for any occasion 🙂
Pictured here, is the second time I served this vinaigrette for a special occasion.
Because it’s special
On the first occasion I had leaf lettuce with one royal gala apple, sliced in half moons, sliced red pepper and tomatoes. That’s it, that’s all. I was planning to crumble in blue cheese but the salad was so flavourful that I didn’t bother.
The second occasion
Was my birthday dinner ❤️
We have a tradition where the honouree gets their favourite dish. I always choose my mother’s manicotti.

Cheese fondue
to start. Mike and my sister followed my recipe and wouldn’t let me help. Apparently I’m very type A 🤷♀️
My sister did the salad and I made this vinaigrette…
This is how I made it
I combined all ingredients in a mason jar that I then mixed well.
Feel free to dress any combo of lettuce, veggies and fruit of your choice. My sister went with green leaf lettuce, celery, cherry tomatoes and yellow peppers.

Ingredients
1/4 cup Extra Virgin Olive Oil
1 Small shallot, finely diced
2 tbsp Red wine vinegar
1 tbsp Lemon juice
1 tsp Honey
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp pepper
Instructions
Combine all ingredients and mix well (I use a mason jar).
Dress any combo of lettuce, veggies and fruit of your choice.
