Brined Chicken Breasts

Here I present a recipe for Brined Chicken Breasts; juicy, delicious, fat-free flavour bombs! Bring on barbecue season 🙂

I think it’s safe to say that spring is here, or that spring has sprung.

That means summer is coming!  I love living in southern Ontario because it means I get to see the beauty of all 4 seasons but let’s get serious…

I love summer 

I love the sun, I love the heat.  I love sitting in my backyard where inevitably I’ll have to listen to that one neighbour pressure washing something 🙃

I love going to the park with my kids and watching them play their sports.

I also love a BBQ, although it doesn’t have to be a bbq with company, it can just be some meat cooked on the bbq.

Enter Brine.

Brining the chicken breasts is just another way of marinating the meat without any extra fat and very few, simple ingredients.

Truth be told though, we bbq year round!

This is how you make Brined Chicken Breasts

Combine the water, salt, lemon juice, sugar, bay leaves and garlic in a pot; bring it to a boil and then turn off the heat and set it aside to cool.

When the brine has cooled, place it in the fridge to come down in temperature completely.

When the brine is cold, place the chicken breasts in it, completely submerging them.

Return the pot to the fridge and let the chicken marinate for 1 hour.

After the chicken is done in the brine, take it out but don’t rinse it.

Pat the meat dry and then preheat your BBQ to medium-high heat.

Description

A recipe for Brined Chicken Breasts; juicy, delicious, fat free flavour bombs! Bring on barbecue season 🙂


Ingredients

Scale

2 Cups water

2 tbsp salt 

1 tbsp lemon juice

1 tbsp sugar

3–4 Bay leaves

3 Cloves garlic, smashed

1/2 tsp pepper 

3–4 Boneless, skinless chicken breasts


Instructions

Combine the water, salt, lemon juice, sugar, bay leaves and garlic in a pot; bring it to a boil and then turn off the heat and set it aside to cool.

When the brine has cooled, place it in the fridge to come down in temperature completely.

When the brine is cold, place the chicken breasts in it, completely submerging them.

Return the pot to the fridge and let the chicken marinate for 1 hour.

After the chicken is done in the brine, take it out but don’t rinse it.

Pat the meat dry and then preheat your BBQ to medium-high heat.

Notes

  1.  The rule of thumb is an hour in brine per pound of chicken.
  2. This brine recipe can be used on any cut of chicken (see note #1).
  3. Bone in chicken breast, brine for 2 hours
