Deli Style Macaroni Salad
Here I present a homemade version of the incredible macaroni salad you get at the deli, the noodles soak up a brine then get coated in two yummy sauces!
I’m always on the hunt for the perfect macaroni salad. Texture is key. It has to be gooey but it can’t be melty-gooey, it has to have a bite. You know?
The noodles need some bite with, zing and a lot of goo.
Plus a little crunch from the celery.
A homemade brine.
Two types of mayonnaise.

This is how you make it
Bring a large pot of water water to boil then cook the macaroni according to package directions.
Meanwhile add the sugar, vinegar, oil, water, salt and pepper to the bowl with the grated onion and and mix well.
Once cooked, drain the macaroni. Mix the brine again then add in the hot macaroni – don’t rinse it with water first.
Mix the noodles in the brine and then let it come down to room temperature.
Cover with plastic wrap then transfer it to the fridge for at least 8 hours, over night is best though,
Remove from the fridge and add the celery, miracle whip and mayonnaise; mix well.
Taste and adjust seasoning.

Ingredients
410 g box of macaroni or 3 1/2 cups
1 Medium onion, gratedÂ
6 tbsp sugarÂ
6 tbsp white vinegarÂ
3 tbsp canola oil
3 tbsp water
1 tsp salt, plus moreÂ
1/4 tsp pepper
1 stalk of celery, diced
1/2 cup miracle whipÂ
1/2 cup mayonnaise
