Lobster Caesar Salad

Here I present my recipe for a Lobster Caesar salad…

There are few things in life that I love more than salad.  Yes salad.  And yes Lisa Simpson, you CAN MAKE FRIENDS WITH SALAD.

There is a chance I’m aging myself here.

This recipe was originally on 04 June, 2018!

That year Mike’s uncle brought 6 lobsters from the east coast to Toronto where Mike went to pick them up.  Thankfully Mike’s dad cooked them for me so I didn’t have to.  I know, I know but I feel like a jerk when I steam mussels 🙈

Especially when you compare the price of ingredients for this incredible dressing compared to the one’s you buy in the store.  Last time I checked the price of my favourite Caesar dressing. it was $7.99!!!!

Description

A recipe for my favourite classic Caesar Salad served with poached lobster; can a meal get any better than this?


Ingredients

Scale

1 Head of Romaine lettuce, broken into bite-sized pieces (cleaned)

4 Strips of bacon, cooked and crumbled

1 tbsp Capers (not rinsed)

2 Lobsters; cooked, peeled and cut into pieces (see notes)

1/4 – 1/2 Cup Caesar Dressing (to your taste)

2 tbsp Grated Parmesan Cheese

1/4 Cup croutons (I went with store-bought)

Instructions

Place the lettuce in a large serving bowl and add in the bacon and capers; Mix well.

Add the lobster on top of the salad and then pour over the Caesar Dressing; mix well

Top with the Parmesan cheese and then the croutons.

Serve immediately.

Notes

1.  I cannot cook a live lobster.  I just can’t.  I’ve used frozen lobster, lobster given to me by family and I’ve even asked the fish counter in my local grocery store to steam the lobster for me.  If you’re braver than i, simply place the live lobsters in a pot of boiling water and cover with a lid for 5-7 minutes, then transfer to cold water to stop the cooking process.  Peel and prepare once the lobster is cool enough to handle.
2.  Feel free to go with my Spicy Jalapeno Caesar Dressing to switch up your salad experience.
