A fun fact
A fun fact about me, is that I love to look at flyers. I basically refuse to pay full price for anything. Then one day I found a 5 pound bag of sweet potatoes on special. That special, inspired this recipe. I was also inspired to use the lime juice, featured here because I bought for another recipe (recipe coming soon… fiesta lime chicken).
I used to be young
I look at the grown up I’ve become and laugh to myself. If teenaged me, saw today me… she’d shake her head 😉😝🙃🤣😂
This is how you make them
You can use an air fryer, or you can follow this recipe for roasting the sweet potatoes:
Combine the sweet potatoes, oil, and all seasoning together. Mix well.
Either transfer to the oven, or air fryer (both work, and both are awesome).
Cook until the sweet potato chunks are coked through, and the edges have a slight char to them.
To make the crema, simply combine the lime juice, and sour cream – mix well.
To assemble the tacos: shell, crema, sweet potatoes, crema, salsa, green onion.

Ingredients
3–4 large sweet potatoes, peeled and cut into chunks
1–2 tbsp Canola oil
1–2 tbsp Cajun Seasoning
1/2 tsp salt
!/4 tsp pepper
1/2 Cup sour cream
1 tbsp Lime juice
Soft tortillas (as many as you’d like, as big as you’d like) – I want with a 10 pack of 7 inch, warmed
Salsa, optional
Green onion, optional
Instructions
