Cajun Sweet Potato Bites

Here I present my recipe for Cajun Sweet Potato Bites, smokey, spicy Cajun seasoning coated on sweet potatoes which are then roasted to perfection – perfect with salads, wraps and more!

This is a recipe I’ve been mulling over for a while now.   It’s no secret I like healthy eating.  As a result, I’m trying to eat less meat.  Part of the substitutions I’ve been using in this quest is mushrooms.  I love having equal parts grilled mushrooms and chicken with my dinner but because of this, Mike is over mushrooms 🤷‍♀️

Then I had one solitary sweet potato left so I made this dish.

How do I count the ways I love this?

I added these to my salads at work with less chicken.  It was a flavour bomb 💣

It was a texture bomb.

It was glorious.

This recipe has inspired me.  Next I’m going to try veggie tacos using these bites.  I’m thinking Cajun Sweet Potato Bites, red onion, peppers, corn and avocado or guacamole 🥑

Omg!!!

Transfer the sweet potato cubes to a baking sheet then drizzle the oil over the cubes.

Season with salt and pepper.

Then the Cajun seasoning.

Mix well.

Place in the oven, once preheated, and roast for 10 minutes.

Flip the potatoes and again season with salt, pepper and cajun seasoning.

Bake for another 10 minutes.

Description

A recipe for Cajun Sweet Potato Bites, smokey, spicy Cajun seasoning coated on sweet potatoes which are then roasted to perfection!

 


Ingredients

Scale

1 Large sweet potato, scrubbed clean and cubed

1–2 tbsp Extra Virgin Olive Oil

Salt, to taste

Pepper, to taste

Cajun Seasoning, to taste


Instructions

Preheat your oven to 425.

Transfer the sweet potato cubes to a baking sheet then drizzle the oil over the cubes.

Season with salt and pepper.

Then the Cajun seasoning.

Mix well.

Place in the oven, once preheated, and roast for 10 minutes.

Flip the potatoes and again season with salt, pepper and cajun seasoning.

Bake for another 10 minutes.

  1. You can add cayenne pepper if you can handle the heat.
