I’m bored of meat
Mike just got a headache and he doesn’t know why!
I’m over turkey, limited on pork and beef; I don’t even like steak anymore. I eat a lot of chicken but my family doesn’t like it more than once a week.
I love fish
My family does not. My children are quite adamant they don’t like fish but I honestly don’t know how they can claim that since they’ve never tried it. To be honest though, fish is so expensive I don’t really feel inclined to have them try it 😂
So in the absence of another meat option I like to add mushrooms to my meals. I find mushrooms are filling and satisfying. Roasting mushrooms deepens their flavour and when you marinate them first and then roast them then, you’re taking them to the next level 🙌
This is how you make it
Mix the extra virgin olive oil, vinegar, lemon juice, soy sauce, garlic, salt and pepper together in a deep plate or bowl.
Add in the mushrooms, mix to coat well.
Marinate 1 hour.
Preheat your oven to 375.
Season the mushrooms with coarse salt and black pepper before putting the dish in the oven.
Bake for 45 minutes, mix mushrooms halfway through!

Ingredients
1/4 Cup Extra virgin olive oil
2 tbsp balsamic vinegar
1 tbsp lemon juice
1 tsp soy sauce
3 Cloves garlic, crushed
1/2 tsp salt
1/4 tsp pepper, plus more
Coarse salt, to taste
227 g Cremini mushrooms, cleaned
2 Portobello mushrooms, cleaned
Instructions
