Marinated, Roasted Portobello Mushrooms

Here I present a recipe for Marinated, Roasted Portobello Mushrooms; a flavourful meat alternative using everyday pantry ingredients, available year round 🙂

I’m bored of meat

Mike just got a headache and he doesn’t know why!

I’m over turkey, limited on pork and beef; I don’t even like steak anymore. I eat a lot of chicken but my family doesn’t like it more than once a week.

I love fish

My family does not. My children are quite adamant they don’t like fish but I honestly don’t know how they can claim that since they’ve never tried it. To be honest though, fish is so expensive I don’t really feel inclined to have them try it 😂

So in the absence of another meat option I like to add mushrooms to my meals. I find mushrooms are filling and satisfying. Roasting mushrooms deepens their flavour and when you marinate them first and then roast them then, you’re taking them to the next level 🙌

This is how you make it
