Sweet and Spicy Sweet Potato Bites
I’m pretty sure it’s a perfectly standard thing in everyone’s house and relationship. One person really likes a certain cuisine or ingredient while their spouse or partner as an equal dislike for said food.
Mike hates fish. He actually despises it. He’s cool with shellfish but you’ll never see him touch salmon or tuna or cod or any of my favourites 😔
So I compromise; I’ll make ribs for Mike which I don’t really eat and then I’ll have Poached Cod or Teriyaki Salmon or, well you get the point!
Now this brings me to sweet potatoes or yams. I don’t like them. At all. I don’t like any root vegetable really except potatoes. Carrots are cool as long as they’re raw. Mike only likes them cooked 🙄
It sounds like we’re doomed, right? Well we’re not! It’s called compromise. I really enjoyed my Southwestern Sweet Potato Bites so I wanted to draw inspiration from them.

Like my previous recipe; you can either bake your sweet potatoes (400 for about an hour until fork-tender) or you can do what I did which is microwave them! It tastes identical in a fraction of the time! Simply press the Potato button twice (for two potatoes!).
When the potatoes are cooked and cool enough to handle, slice them into one-inch discs/slices (with the skin still on).
Lay the sweet potato discs on a platter and then top each disc with a tbsp (or so) of the guacamole and then top with a tbsp (or so) of the Mango Salsa.
Serve immediately.
