Mango Salsa 

I am obsessed!  Ask anyone I talk to on the regular.  I am obsessed with fish tacos (recipe coming soon)… I love a soft taco with Cajun fish, guacamole and of course THIS recipe.

Mango Salsa.

Mango Salsa is pivotal to a successful fish taco.

You read that right; pivotal.

You have crunch, sweet tang and of course the heat from the fresh jalapeño peppers.

This recipe comes together in minutes and it can be used in many other dishes too (hint, hint… another recipe is coming) 😎🥑🌮😂

Description

Sweet and spicy fresh salsa; the most amazing condiment to come together in mere minutes 🙂


Ingredients

Scale

1 Mango, diced

½ Jalapeno pepper (seeds and all), diced

¼ Red pepper, diced

¼ Red onion, diced

¼ Cup corn kernels (I just used frozen)

The juice of one lime


Instructions

Simply mix all ingredients together.

This will keep in the fridge for up to 5 days.
