Shrimp Tacos

I just made these this weekend and had to re-share!  Bon Appetit 🙂

There’s nothing like a shrimp taco.

cajun shrimp tacos

Its buttery.  Sweet.  Spicy.

The condiments are cool and crunchy.

Its a flavour sensation wrapped in a warmed tortilla.

In under 20 minutes.

I love you shrimp tacos.

Pan-Seared shrimp seasoned with cajun spice, wrapped in a warmed tortilla shell with fresh guacamole, a sweet and spicy, crunchy mango salsa, topped with a whipped scallion and lime dressing; literally another flavour and texture extravaganza 🙂

Description

Pan-Seared shrimp seasoned with cajun spice, wrapped in a warmed tortilla shell with fresh guacamole, a sweet and spicy, crunchy mango salsa, topped with a whipped scallion and lime dressing; literally another flavour and texture extravaganza 🙂

Ingredients

Scale

453g/1lb shrimp, cleaned and deveined

Cajun seasoning, to taste

1 tbsp extra virgin olive oil

8 Flour tortillas, warmed (I just use the microwave but the oven will work too)

1 Batch Guacamole

1 Batch Mango Salsa

1 Batch Creamy Lime Scallion Dressing (you can use ranch sauce in a pinch)

Instructions

Heat a frying pan over medium high heat and add the olive oil, when it’s hot (the oil will ripple) add in the shrimp; season with some of the Cajun seasoning.

Cook for 2-3 minutes until the shrimp are cooked.

You can tell the shrimp are cooked when they are pink and opaque and have curled into the letter “C”.

To assemble the tacos put some guacamole (1-2 tbsp in the centre of the warmed shell.

Top with an 1/8th of the shrimp in the pan.

Top with the mango salsa (again, about 1-2 tbsp), then drizzle the mayo or ranch sauce.

Serve immediately and enjoy one of my favourite meals ever 🙂

Notes

Notes:

  1. To warm the tortillas, wrap tightly in wax paper and microwave on high for one minute.
  2. Yes this is virtually identical to my Fish Tacos tacos but I’m telling you, they’re awesome!!!

That dressing sounds divine, and I love a good mango salsa! Great flavor combos here!
