Spicy Vegan Power Bowl

I’m not vegan, nor am I a vegetarian but I do love the idea of eating a plant-based meal on the regular. This meal offers both hot and cold, smooth and crunch, spice and creaminess to cut the heat.

And in case you’re okay with some dairy in your diet like I am… you can add ranch dressing to make this over-the-top delicious (but then it’s not vegan)!

Description

A plant-based, vegan-bowl meal that offers both hot and cold, smooth and crunch, spice and creaminess to cut the heat.

 


Ingredients

Scale

2 Medium sweet potatoes, skin cleaned, baked and cut into large chunks

Cajun Seasoning, to taste

Chipotle sauce, or hot sauce, to taste (I just used store-bought)

1 Cup corn (I used frozen)

1 Medium tomato, chopped

2 Green onions, sliced

1 Jalapeño pepper, sliced

Ranch dressing, to taste (optional)


Instructions

Place the sweet potatoes into a bowl and season with some Cajun seasoning.

Then drizzle some of the chipotle sauce on top.

Top evenly with the corn, then tomato, green onions and finally the jalapeno peppers.

Top with ranch dressing if using (mine isn’t vegan) though.

  • Prep Time: 5 Minutes
