

Meal Plan Week 116
Planning ahead is key to meal prep. My kids will ask me on Sunday what we’re going to have for dinner the following Thursday and I always have an answer!
MONDAY:
Old-Fashioned Beef Stew with Dumplings
Prep the crockpot recipe on Sunday then store in your fridge until Monday morning. Set the crock pot to low on Monday morning then follow the recipe to thicken the stew when you get home from work, don’t forget the dumplings!
I fully acknowledge it’s May but this is November weather 🙁
TUESDAY:
Old-Fashioned Chicken-Vegetable Bake with Cheese
Bake another 2 chicken breasts in a separate dish; season with salt and pepper.
Wednesday:
Butter and Garlic Baked Scallops
serve with a …
GREEN SALAD
(prep enough salad for two meals and then store half in the fridge for another day).

Sweet Onion Roasted Cauliflower
(Set the oven to 425, not 400)

CRUSTY HOMEMADE BREAD
As always you can go with store-bought bread. Simply throw a loaf of bread in the freezer the day you buy it and take it out an hour before you sit down to eat, it’ll be just like fresh baked, oooh warm it slightly in the oven!
Thursday
Moroccan Fettuccine with Grilled Chicken
use the leftover chicken from Tuesday.
Friday:
Teriyaki Meatballs
serve with rice, cook according to package directions… 1 cup uncooked rice will make 2 cups cooked which is perfect for a family of 4 – with leftovers!
