

Asian-Style Marinated Tomatoes
This is a recipe that I created years ago! So many years ago. Like I don’t feel old until I do the math, years ago.
This is a very simple salad that goes great with ANY protein and ANY side. I especially love when the marinade mixes with the rest of the plate, extra yummy seasoning with the crunch of the green onions.
A super simple tomato salad with tangy vinegar and the umami of the soy sauce. This recipe comes together in minutes and has always been a big hit.
This is how you make it:
Whisk together the oil, vinegar, soy sauce, garlic powder, pepper and half the green onion. Don’t add the salt until you’re ready to serve the tomatoes because the salt will make them smushy.
Add in the tomato slices, completely submerging under the marinade.
Let the tomatoes marinade for 20 minutes, up to an hour.
Season with salt and top with the remaining green onion.
Serve immediately.

Ingredients
1/4 Cup Canola oil
2 tbsp Rice wine Vinegar
1 tbsp sodium reduced soy sauce
1 tsp garlic powder
Pepper, to taste
2 Green onions, sliced, divided
4–5 Plum Tomatoes, sliced thin
Salt, to taste
Instructions
Whisk together the oil, vinegar, soy sauce, garlic powder, pepper and half the green onion. Don’t add the salt until you’re ready to serve the tomatoes because the salt will make them squishy.
Add in the tomato slices, completely submerging under the marinade.

Notes
- You can go with cider vinegar or white wine vinegar in place of Rice wine vinegar if you’d like 🙂
