This is another vegan recipe I shared years ago… enjoy!

I am of the opinion that one can never have too many easy, delicious veggie recipes. This side comes together in under 10 minutes and is honestly really yummy.

Asian Style Mushrooms and Green Beans

Description

A recipe for sautéed mushrooms and green bean that are coated in a garlic-soy sauce.  This can be on the table in under 10 minutes!


Ingredients

Scale

1 tbsp extra virgin olive oil

227 g cremini mushrooms, sliced

227 g green beans, cleaned and cut in one inch pieces

2 Cloves garlic, crushed

1 tbsp sodium reduced soy sauce

Salt

Pepper


Instructions

Heat the olive oil over medium high heat in a large frying pan and when the oil is hot (it will ripple) add the mushrooms and green beans and season lightly with salt and pepper.

Saute for 5 to 7 minutes, until the mushrooms are browned and the beans are fork tender, they may even have some yummy scorch marks on them (yum!).

Add the garlic and sauté for about 30 seconds, careful not to let it burn.

Add the soy sauce and mix it around, scraping any food that may be stuck to the bottom of the pan (deglazing).

Turn off the heat on the pan and taste and adjust seasoning.

Serve promptly.

Notes

  1. Feel free to use white button mushrooms in place of the cremini mushrooms.
