Asian-Style Coleslaw with a Sesame Ginger Dressing
I never know when inspiration is going to strike. I was at my parent’s house for lunch and my mother served an Asian Salad Kit she’d picked up at a local grocery store.
It was delicious but it had a few no-no’s like fried wonton chips; totally delicious but I was pretty sure I could come up with a healthier alternative.
And I did!
I love how the flavours of the veggies are complimented by the ingredients in the Sesame Ginger Dressing.
As I mentioned in the recipe, this can be served right away like a salad or stored for days like a coleslaw.
This is a healthy recipe for a flavour-texture mega bomb! Asian-Style Coleslaw with a Sesame Ginger Dressing has crunch, tang, its sweet and salty and completely satisfying.
1/4 Cup Canola Oil
2 tbsp (sodium-reduced) Soy sauce
2 tbsp Rice wine vinegar
2 tbsp brown sugar
1 tsp ground ginger (or 1 tbsp fresh ginger)
1/2 tsp garlic powder (or 1 clove, minced)
10 Dashes sesame oil
1 tsp sesame seeds
Salt, to taste
Pepper, to taste
In a microwave-safe dish, whisk together the canola oil, soy sauce, vinegar, brown sugar , ginger and garlic powder.
Microwave for 30 seconds, then whisk again.

Add the sesame oil and seeds; mix well.
Taste and adjust seasoning.
Combine the coleslaw mixture with the celery, red pepper and green onion then add all the dressing to the coleslaw mixture; mix well.
