Old-Fashioned Chicken-Vegetable Bake with Cheese

Description

This is literally a “dump and go” dinner that can be made ahead of time and then put in the oven whenever you’re ready!


Ingredients

Scale

1 ½ pound of potatoes, skin on, scrubbed and cut into 1 inch chunks

1 Bunch of broccoli, florets only

1 Small onion, sliced into sticks

½ Medium red pepper, diced

½ tsp salt, plus more

½ pepper, plus more

3 or 4 boneless, skinless chicken breasts

284 ml can of condensed cream of broccoli soup (go with reduced fat)

1 Cup milk

1 tbsp Parmesan cheese

1 tsp garlic powder

1 Cup old grated cheddar cheese


Instructions

Preheat your oven to 375.

Use a casserole dish big enough to hold all the ingredients and spray lightly with cooking spray (optional).

Place an even layer of the potatoes on the bottom of the dish, then top with the broccoli florets, then the onion and finally the peppers; season with salt and pepper.

Place the chicken breasts on top of the veggies.

Prepare the sauce; mix together soup, milk, parmesan cheese, garlic powder, ½ tsp salt and ¼ tsp black pepper.

Pour the sauce evenly over the chicken and veggies.

Cover tightly with aluminum foil and bakes for 50 minutes.

Once cooked, top the chicken evenly with the cheddar and place under the broiler until the cheese is bubbling.

Let the dish rest for 10 minutes before serving.

Notes

  1. Go with any potatoes you have on hand.
  2.   Cut the potatoes into smaller chunks than my picture because the larger pieces were hard 🙁
  3. Bone-in chicken will work here too but you may need to add up to 20 additional minutes to the cooking time.
  4. Any condensed cream soup will work here.
  5. This dish can be prepared ahead of time, stored in the fridge and simply transfer to the oven.
