Tangy Broccoli and Apple Salad

With BBQ season fast approaching we all need lightened up salads in our repertoires.   I was inspired once again during my Saturday morning routine where my daughter woke up the rooster who woke up this mom and I laid in bed with Paw Patrol, a toddler snuggled up with me and Facebook (admittedly I only had one eye open at this point but you get the picture).  It’s really easy to get caught up in the word “salad”; mayonnaise, cheese, bacon, nuts… See where I’m going with this???  Step away from the calories and try this insanely tangy, crunchy salad… That’s right…. SALAD, like for real 😉

broccoli and apple salad

 

This is what you’ll need

½ Cup low fat mayonnaise

½ Cup fat free sour cream

1 tbsp white (distilled) vinegar

1 tsp white sugar

½ tsp salt

½ tsp pepper

1 Large carrot, grated

½ Small onion, grated

1 Large stalk celery, diced

1 Medium Royal Gala apple, skin-on, chopped

1 Bunch broccoli, florets only

1-2 Pinches sunflower seeds (optional)

 

This is how you make it

In a large bowl, whisk together the mayonnaise, sour cream, vinegar, sugar, salt, pepper, carrot and onion.

Fold in the celery, apple and broccoli florets; mix well.

Cover and refrigerate for 2 hours, up to 24.

Taste and adjust seasoning before serving and then top with the sunflower seeds if using.
