

Roasted Curried Chicken Drumsticks
Here I present my recipe for Roasted Curried Chicken Drumsticks, they’re spicy and juicy and the skin is slightly crispy thanks to the cornstarch.
I was going through Pinterest one day looking at what seemed like dozens of recipes that I wanted to try that called for Jamaican Curry.
I was intrigued. Just what oh what made Jamaican curry different from curry – curry? I’d call call it Indian curry but I’m not sure what I use is actually from India.
I’m talking yellow deliciousness.
I love curry
I asked a girlfriend who happens to be of Jamaican descent what the difference is and she had no idea 🤷♀️ She’s born in Canada just like me 🤣
Anyway she picked up this pack of Jamaican curry powder from her local Caribbean market, she said this was the one she uses.
So with Jamaican curry powder on hand I went back to Pinterest to see which recipe I wanted to try.
I couldn’t find them, I forgot to pin them🙈
Then I saw chicken drumsticks were on sale and this recipe was born 😊
This is how you make them
Combine all the cornstarch, Curry powder, garlic powder, salt and pepper in a large mixing bowl then add in the chicken drumsticks; mix well to coat. This part takes some time, about 30 minutes for the chicken to absorb all the seasoning. You’ll know its done wen the bowl doesn’t have any cornstarch left.
Once the chicken has absorbed all the seasoning transfer the chicken pieces to a greased or parchment paper-lined baking sheet.
Roast at 425 for 45 minutes, flip halfway through the cooking time.
Let the chicken rest for 10 minutes before serving.
It’s yummy!
Feel free to add a 1/2 tsp cayenne for a little heat!

2 tbsp cornstarch
1 tbsp Curry powder
1 tsp garlic powder
1/2 tsp salt
1/4 tsp Pepper
12 – 18 chicken drumsticks
