Meal Plan Week 102

Planning ahead is key to meal prep.  My kids will ask me on Sunday what we’re going to have for dinner the following Thursday and I always have an answer!

MONDAY:

Classic Meat Loaf I LisaGCooks.com

Good Old Fashioned Meatloaf

Prep the beef mixture on Sunday and store it wrapped, in your fridge until you’re ready to bake it.  My family likes having rice instead of potatoes so prepare your favourite rice too!

You can also prep the chicken and filling for Tuesday’s dinner on Sunday as well 🙂

TUESDAY:

Cheesy Stuffed Chicken Breasts with Tomatoes and Peppers I LisaGCooks.com

Cheesy Stuffed Chicken Breasts with Tomatoes and Peppers

Season and bake 2 additional chicken breasts for Friday’s dinner – these won’t need to cook as long so take them out of the oven after 25 minutes.

Buttermilk Mashed Potatoes

Add 2 extra (large) potatoes – you’re looking to have a cup and a half leftover mashed potatoes for tomorrow’s dinner.

WEDNESDAY:

THURSDAY:

no bread maker necessary easy home made bread

Crusty Homemade Bread

As always you can go with store-bought bread.  Simply throw a loaf of bread in the freezer the day you buy it and take it out an hour before you sit down to eat, it’ll be just like fresh baked, oooh warm it slightly in the oven!

FRIDAY:

Moroccan Fettuccine with Grilled Chicken I LisaGCooks.com

Moroccan Fettuccine with Grilled Chicken 

Use the cooked chicken breasts from Tuesday.

Serve with the remaining…
