Tomato – Tortellini Soup
Without even realizing it I’ve stumbled into our family traditions. As soon as it gets cold outside I make a beef stew in the crockpot. Today was our first significant snow fall of the season which meant soup had to simmer on the stove! I wanted the kids to come in from playing in the snow to a warm house filled with the aroma of homemade soup. One day they’ll look back and appreciate the effort but for today all I heard was “ugh, soup? I don’t like soup why can’t we order pizza?”

Anyway Mike and I enjoyed the soup. This had a very rich broth made with chicken stock, aromatic veggies and diced tomatoes. I’ve never been a fan of tomato soup but honestly this is next level soup!!! You’re going to love it (my kids even ate it without too much complaining 😬).
This is how you make
Bring stock and water to boil
Add all ingredients except tortellini
Simmer for 60 minutes
Bring the soup upto a boil then add the tortellini and cook until tender; about 10 minutes.

Ingredients
6 cups stock
2 cups water
1 carrot, sliced
1 stalk celery, sliced
1/2 onion, sliced
796 ml can of Diced tomatoes
1/2 tsp garlic powder
1/2 tsp salt
1/2 tsp turmeric
1/4 tsp pepper
250 g fresh or frozen Tortellini
Instructions
Bring the stock and water to a boil.
Add all ingredients except the tortellini
Simmer for 60 minutes
