Tortellini Soup
I hate to be a negative nelly but I’m so sick of the cold weather. I hate the cold weather. It could be argued that I’m on the thin side – not at all conducive to thriving in a Canadian winter 🥶Â
The number one thing that makes me feel better besides my heating pad and fireplace is homemade soup.
I let this soup simmer for 60 minutes before I added the tortellini but that time could easily be cut down to 20 minutes which would make this a 30 minute meal 🤗
AND if you use veggie stock in place of chicken this will be a vegetarian meal… IF you get cheese, not meat filled tortellini 🤣🤣🤣
This is how you make it:
Bring the stock and water to boilÂ
Add all the ingredients except tortellini.Â
Simmer for 60 minutes.Â
Add the tortellini and cook as per package directions.

6 cups stock
2 cups water
1 carrot, sliced
1 stalk celery, sliced
1/2 onion, slicedÂ
Handful fresh spinach, chopped
1 tsp garlic powder
1/2 tsp saltÂ
1/2 tsp turmericÂ
1/4 tsp pepperÂ
250 g fresh or frozen TortelliniÂ
Instructions
