In the meantime
Christmas is in 8 days and here is a great appetizer to serve your guests.
This is how you make it
Combine the wine, butter, garlic, thyme, bay leaves, salt and pepper, in a pot with a tight-fitting lid, and then bring it to a boil.
Add in the mussels and immediately cover the pot with the lid and give the pot a little shake.
Let the mussels steam until they open up, about 5 minutes.
If the steam starts to escape from the lid then the mussels should be cooked; turn off the heat and let the mussels stand until the timer goes off.
Discard any mussels that did not open.

Notes
- Store in the fridge immediately after buying them, do not rinse them or store them in water because they will die.
- If you are buying farmed mussels, ie, from the grocery store then all you have to do to clean them is rinse them under cold water just before you cook them.
- Cook and eat the mussels the day you buy them.
