Combine the wine, butter, garlic, thyme, bay leaves, salt and pepper, in a pot with a tight-fitting lid, and then bring it to a boil.

Add in the mussels and immediately cover the pot with the lid and give the pot a little shake.

Let the mussels steam until they open up, about 5 minutes.

If the steam starts to escape from the lid then the mussels should be cooked; turn off the heat and let the mussels stand until the timer goes off.

Ingredients

Scale

2 lb mussels/1 Bag, cleaned (see notes)

1 Cup white wine

2 tbsp (salted) butter

4 Cloves garlic, smashed

56 Fresh Thyme sprigs

23 Bay leaves

½ tsp salt

1/4 tsp pepper


Instructions

Combine the wine, butter, garlic, thyme, bay leaves, salt and pepper, in a pot with a tight-fitting lid, and then bring it to a boil.

Add in the mussels and immediately cover the pot with the lid and give the pot a little shake.

Let the mussels steam until they open up, about 5 minutes.

If the steam starts to escape from the lid then the mussels should be cooked; turn off the heat and let the mussels stand until the timer goes off.

Discard any mussels that did not open.

Notes

  1. Store in the fridge immediately after buying them, do not rinse them or store them in water because they will die.
  2. If you are buying farmed mussels, ie, from the grocery store then all you have to do to clean them is rinse them under cold water just before you cook them.
  3. Cook and eat the mussels the day you buy them.
