Creamy Vinaigrette

Check out my super simple recipe for a creamy vinaigrette, it balances sweet with tang, and its served on fresh lettuce with crunchy corn and red onion 🙂

This is the perfect time of year for fresh corn, in southern Ontario (my home!).

Summer Lovin’

This is such a bittersweet time of year for me, I love the hot hot summer but I also love when the temperature starts to drop at night.

You can see a difference in the sky too, there are prettier colours in our sunsets.

My kids are going back to school next week, its also bittersweet.

They’re growing up so fast. Too fast. It’s going too fast.

September brings school, tryouts, fall training.

It also brings out my crockpot!

So in honour of late August, I present a recipe for a creamy vinaigrette, and a fresh green salad 🙂

This is how you make the Vinaigrette

Mix all ingredients together, until well combined and store in the fridge until you’re ready to devour!

Combine the lettuce, corn and red onion.

Lightly dress with the creamy vinaigrette.

Description

A simple recipe for a creamy vinaigrette that balances sweet with tang, served on fresh lettuce with crunchy corn and red onion 🙂


Ingredients

Scale

Creamy Vinaigrette

1/4 Cup canola oil

2 tbsp White wine vinegar 

1 tbsp Lemon juice 

1 tbsp mayonnaise

1 tsp Honey

1/2 tsp Garlic powder 

1/2 tsp Salt 

1/4 tsp Pepper

Salad

1 Head of lettuce, cleaned (I went with leaf lettuce)

1/2 Cup fresh or frozen corn (or the kernels off one cob)

3–4 slices of red onion, thinly sliced

Creamy vinaigrette dressing


Instructions

Creamy Vinaigrette

Mix all ingredients together, until well combined and store in the fridge until you’re ready to devour!

Salad:

Combine the lettuce, corn and red onion.

Lightly dress with the creamy vinaigrette.

Mix well and serve immediately 🙂

Notes

  1. I went with canola oil because its heart healthy and olive oil is too expensive now.
  2. I use a mason jar to make my dressings.
