Honey Lime Peanut Vinaigrette
A really good friend of mine is obsessed with Milestone’s Chicken Salad – obsessed. She asked me to replicate their dressing and while my dressing here is nothing at all like their’s (I don’t remember what it tastes like), this dressing is definitely inspired by Milestone’s Chicken Salad dressing.
Makes about ½ Cup
The zest of ½ lime
The juice of ½ lime
2 tbsp extra virgin olive oil
1 tbsp honey mustard
2 tsp light smooth peanut butter
2 tsp sodium-reduced soy sauce
1 Clove of garlic, crushed
5 Dashes Sesame oil
½ tsp sugar
¼ tsp salt
¼ tsp pepper
Whisk all ingredients together and then taste and adjust seasoning.
Notes:
- If the lime isn’t that juicy and the vinaigrette needs more acid then go ahead and add the juice from the other half of the lime.
- This dressing is great on a fresh garden salad with lots of crunchy veggies.
- MK… I’m going to make you that dressing… I promise!
