Prosciutto Crisps

I used to go to Casino Niagara with my mother and her friend, Dianne.  Dianne was what we referred to as “my second mother”.  Over the years our relationship has distanced as these things naturally do but I’ll always remember the adventures she included me in.

Enter Casino Niagara.

They had what was referred to as a “High Roller’s Lounge”.  I myself was NOT a high roller.  I was in my 20’s and broke!  My boyfriend and I at the time didn’t even have hot water in the Southern Ontario winter for which we found ourselves.  I literally drove to his mother’s house or mine to shower before lecture.

So, when I was invited to the “High Roller’s Lounge for dinner I said “Um, yep!”

This is where I discovered baked pancetta which inspired “Prosciutto Crisps”.

Enter Prosciutto Crisps…

This is how you make them:

Preheat your oven to 425.
