Warm Garlic Mashed Potatoes
Here I present my recipe for Warm Garlic Mashed Potatoes; a recipe for light, fluffy mashed potatoes that are kind to your waistline and have an intense garlic flavour, thanks to the infused olive oil and butter 🙂
So the Canadian Thanksgiving has come and gone. My sister hosted again and she did a phenomenal job. She didn’t even accept help with the dishes!!!
So now on to Christmas 🎄
We’re hosting Christmas and there will be 11 of us.
That spells turkey.
With these potatoes!
I’m going to double the recipe and keep them warm on the stovetop while Mike carves the turkey.
We’ll have:
Turkey
Gravy
(Store bought) stuffing
Roasted Broccoli
And of course a…
Salad
I think these potatoes are going to steal the show ☺️
This is how you make them
Add the garlic cloves to a small sauce pot and then add the olive oil and butter.
Heat over medium heat until there is a low bubble to infuse the oil and butter.
Set aside.
Add the potatoes to a large pot and cover with two inches of water, bring it to a boil then drop to a simmer until the potatoes are fork-tender.
Strain the potatoes using a slotted spoon and save the starchy cooking water.
Transfer the hot potatoes to the bowl of your stand mixer.
Pour in the olive oil mixture, the cream, cooking water, salt and pepper
Use the paddle attachment of your stand mixer, start at mix – anymore will make the food go flying (trust me!).
Mix until completely smooth.
Taste and adjust seasoning.

Ingredients
6–8 Yellow fleshed potatoes, scrubbed clean
4 Cloves garlic, peeled
1/4 Cup extra virgin olive oil
2 tbsp salted butter
1/4 Cup 10% cream
2 Cups reserved starchy potato cooking water
1/2 tsp salt
1/4 tsp pepper
Instructions
Add the garlic cloves to a small sauce pot and then add the olive oil and butter.
Heat over medium heat until there is a low bubble to infuse the oil and butter.
