Roasted Cauliflower Bites

Ohhhh cauliflower, how I dislike you. I know you’re healthy, but you’re flavourless, and smushy when you’re cooked. Plus, you smell bad.

And yet 👆

I buy you, when you’re on sale.

I also tend to get cauliflower in my veggie box order…. 

So I’m trying to find ways to make this incredibly healthy vegetable shine. In all honesty though, I find most of my recipes hide the cauliflower, instead of highlighting it.

I did find this particular recipe yummy though, and my son devoured it… I call that a win 🥇 

This is how you make them

Preheat your oven to 425.

Combine the cauliflower florets with the olive oil, salt and pepper on a baking sheet.

When the oven is preheated, roast the cauliflower for 20 minutes.

Meanwhile add half the bbq sauce to a large mixing bowl.

Once the cauliflower has finished roasting, transfer it to the bowl.

Toss to coat evenly, and then add the remaining bbq sauce.

Mix well.

Transfer the sauced cauliflower back to the baking sheet.

Roast for another 10 minutes

Taste, and adjust seasoning.

Transfer to a platter immediately.

Drizzle the ranch dressing on top of the cauliflower, then top with the green onion.

Description

A lightened up recipe for Roasted Cauliflower Bites; bbq sauce-coated cauliflower pieces. inspired by the pub favourite – only baked.


Ingredients

Scale

1 Small head of cauliflower, broken up into florets and cleaned

1–2 tbsp extra virgin olive oil 

1/2 tsp Coarse salt

1/4 tsp pepper

1/2 cup of your favourite bbq sauce

2–3 tbsp ranch (store-bought is fine)

3 green onions, sliced


Instructions

Preheat your oven to 425.

Combine the cauliflower florets with the olive oil, salt and pepper on a baking sheet.

When the oven is preheated, roast the cauliflower for 20 minutes.

Meanwhile add half the bbq sauce to a large mixing bowl.

Once the cauliflower has finished roasting, transfer it to the bowl. Toss to coat evenly, and then add the remaining bbq sauce.

Mix well.

Transfer the sauced cauliflower back to the baking sheet.

Roast for another 10 minutes

Taste, and adjust seasoning.

Transfer to a platter immediately.
