Pasta Pesto alla Carlofortina
Have you ever heard the saying, “you don’t know, what you don’t know”? Well that was me! I didn’t know about Pesto alla Carlofortina, at all! I’d never heard of it, seen it, tasted it, dreamt of it but there it was!

Now from my very limited research since I don’t speak Italian, the authentic dish uses smoked filets, I went with a can of tuna 🤷♀️
It totally works.
For this absolute deliciousness – that can be ready in 12 minutes!!! You will need: 1 Batch of Pesto Sauce (which can be made days ahead of time), a 375 g box of spaghetti, cooked according to package directions, 1 cup of the pasta water, reserve just before straining the pasta and a 198 g / 7oz can f good quality tuna packed in oil, drained.
1 Medium tomato, chopped
Combine the cooked pasta with half of the pesto sauce and the reserved pasta water. Mix well and set aside.
In a large bowl, add the tuna, remaining pesto and the chopped tomato.
Add in the pesto pasta.
Mix well and serve immediately!

Ingredients

- The pesto can be made ahead of time and you can have dinner on the table in like 12 minutes!!!!!
