Monday:
Spicy Mussels in a White Wine Cream Sauce with Bacon and Tomatoes
Simply serve withĀ Crusty BreadĀ to soak up all the yummy sauce (store-bought bread will work too!).

Honey-Lime Marinated Grilled ChickenĀ (cook two extra chicken breasts), serve with rice (cooked according to package directions)…
and Asian Broccoli and Snow Pea Salad
Wednesday:
Healthy, Spicy Southwestern Macaroni and Cheese
Serve with a Green Salad (Iād go with myĀ Sweet Honey Mustard VinaigretteĀ to compliment the heat of the pasta). Ā Prep enough lettuce and veggies for two salads; store half in the fridge for Thursday.
Thursday:
Chicken Quesadillas (double the recipe)
WithĀ the remainingĀ Green SaladĀ from Wednesday. Ā Use the yummy marinated chicken breasts from Tuesday,
