

Herbed Mayonnaise
I’m so not a gardener but I’d love to be! Every Mother’s Day (well, 3 so far) Mike buys me a ton of fresh herbs from the Garden Centre and then he plants the herbs for me… and he keeps them alive all summer long! So thanks to Mike, I have a ton of fresh herbs that inspired this Recipe Redux theme of “Fresh From the Garden”. Take this recipe and make it your own by using your favourite fresh herbs; it’s a great spread on sandwiches or a great sauce on a barbequed hamburger.
Makes 4 (1 ½ tbsp servings)
2 tbsp half fat mayonnaise
2 tbsp fat free sour cream
The juice of half a lemon
¼ Cup of chopped fresh herbs of your choice, here was my breakdown:
A big handful of fresh basil, chopped
A small handful of fresh parsley, chopped
5-6 Sprigs of fresh thyme, leaves only
½ a Sprig of fresh rosemary, leaves only, chopped
Salt (to taste)
Pepper (to taste)
Combine all ingredients and serve immediately, otherwise store, covered in the fridge.
Notes:
- Again, use your favourite herbs here.
- The longer this sauce sits, the more flavour it has.
