Chewiest Peanut Butter Cookies

Chewiest Peanut Butter Cookies

In case I haven’t been clear, I’m an absolute chocoholic, I love it and I’d eat it every day. With that said, I must say I love peanut butter too! My idea of decadence is anything peanut butter with more peanut butter!!!! These cookies have the consistency of a soft fudge with an incredible peanut butter taste.

Makes (around) 30 Cookies

2 (Large) eggs at (at room temperature)

1 Cup (packed) dark brown sugar

¾ Cup smooth peanut butter (Light or full fat)

¼ Cup (salted) butter (at room temperature)

2 tsp vanilla extract

2 Cups all purpose flour (I used white, eeek)

1 tsp Baking powder

¼ tsp salt

Preheat your oven to 375.

In large bowl mix the eggs, brown sugar, peanut butter, butter and vanilla extract until smooth.

In another large bowl, combine the flour, baking powder and salt.

Slowly add the flour mixture to the egg and peanut butter mixture and mix until completely smooth.

On ungreased cookie sheets, drop the dough by rounded tablespoons, 2 inches apart (a cookie scoop is absolutely the easiest tool here).

Bake for 8 minutes, until the edges have started to brown. The top of the cookie will be pale and it will be really soft but the bottom of the cookie will be brown.

Leave the cookies on the baking sheet to cool for 5 minutes and then transfer them to cooling racks.

Notes:

  1. Make sure you let the cookies sit before you transfer them to the baking sheet because they’re not completely cooked when they come out of the oven; they finish on the cooling rack!
  1. Use a spatula to transfer the cookies they’re really soft at this point
  1. To take these to the next (naughty) level, stir in a 270 g – 300 g bag of semi-sweet chocolate chips.
