

California Fusion Sandwich
This is a ‘putting it altogether’ recipe, this is important because it’s what cooking is, taking parts and pieces of your favourite recipes and making a meal and how Mike and I actually eat and how we stay healthy!
Serves 4
4 Whole Wheat Brioche Hamburger Buns (or any whole wheat bun)
1 Medium vine ripened tomato, sliced into 4 even slices
Salt (to taste)
Pepper (to taste)
2 Cumin Grilled Chicken Breasts (cooked), sliced into ¼ inch slices
1 Medium avocado, peeled and sliced into 4 even pieces
1 Batch of my Curry Mayonnaise with Lime
Toast the brioche buns and then place a tomato on the bottom of each bun; season with salt and pepper.
Top each tomato slice evenly with the chicken slices.
Top the chicken evenly with the avocado and then with some mayonnaise, about a tbsp per sandwich.
Top with the top bun!
Notes:
- I know, it’s a sandwich!!!
- It’s so good though!
- Garnish with sliced green onions if you have it on hand but it’s not necessary if you don’t have it on hand.
- Serve with a Green Salad for a complete (and absolutely healthy and satisfying) meal.
