Chicken and Waffle Sandwich
This is another ‘putting it altogether’ recipe; I love making a sandwich using homemade waffles because it’s something a little different and absolutely delish (did I mention the little squares hold more yummy sauce?).
Serves 4
2 Anna’s Waffles with Chives (1/2 waffle per sandwich)
1 Medium vine ripened tomato, sliced into 4 even slices
Salt (to taste)
Pepper (to taste)
2 Beer Marinated Grilled Chicken breasts (cooked), sliced into ¼ inch slices
1 Batch of my Herbed Mayo
Make the waffles according to the recipe directions.
Place a tomato on the bottom of a quarter of a waffle (after the waffles are cooked); season with salt and pepper.
Top each tomato slice evenly with the sliced chicken breasts.
Top the chicken with some mayonnaise, about a tbsp per sandwich and then top with the other quarter of the waffle.
Notes:
- I know, it’s another sandwich!!!
- It’s so good though!
- Garnish with chives or sliced green onions if you have it on hand but it’s not necessary if you don’t.
- Serve with a Green Salad for a complete (and absolutely healthy and satisfying and yummy) meal.
