Green Goddess Dressing

This is a recipe I shared years ago; perfect for this time of year 🙂

The first time I saw this dressing was on Food Network, it was a mayonnaise based salad dressing with fresh herbs, not the healthiest! According to the Food Network this was a popular dressing in the 70’s but my parents had never heard of it. Oh well, they liked it anyway! In case you’re wondering, my mother let it slip that the dressing has anchovies so Mike refused to try it. The silly thing is, anchovy’s add insane flavour and you can’t tell its fish! Oh well, good thing Mike hasn’t figured out the other recipes I add anchovies to!!!

Description

A recipe for a creamy dressing with fresh herbs and garlic, perfect for any and all salads 🙂


Ingredients

Scale

½ Cup fresh parsley (large handful)

¼ Cup fresh basil (small handful)

¼ Cup fresh chives (small handful)

1 Clove of garlic, peeled

2 Anchovy fillets, patted dry

The juice of half a lemon

1/2 Cup fat free sour cream

2 tbsp light mayonnaise

½ tbsp white wine vinegar

½ tsp salt

¼ Pepper


Instructions

Puree all ingredients in a blender, food processor, or even using an immersion blender; mix until completely smooth.

Taste and adjust seasoning.

Notes

  1. Use whatever herbs you have on hand, mixing them up really changes the dressing.
  2. If you don’t have any chives then use a green onion in its place.
  • Prep Time: 5 Minutes
