This is a recipe I shared last year. This will be perfect for Christmas morning or every other holiday celebrated with family too. I wish everyone a safe and healthy holiday season. I feel so grateful and blessed – I hope everyone can feel the love and magic of the season, the way I do.
Farmer’s Casserole
I did something I don’t normally do: I looked back. I never look back, you shouldn’t. Never look back, you’re not headed that way.
I looked back at my first recipe this year where I felt it was crappy so far. It still is!!!
I want 2022 to be better for all of us.
I’ll start my year out with this breakfast casserole. It has cheese, sausage and tons of veggies. Maybe if I start the new year with a hearty breakfast it won’t suck so bad 🤞🤞
This is how I’ll make it:
Preheat your oven to 375.
I also used up some leftover tater tots…
Add the hash browns to a deep 9 x 13 lasagna pan (spray with cooking spray first) then add the sausage, peppers and tomatoes.
Add in the cheddar.
In a separate dish add the eggs, milk and season with salt and pepper (about 1/2 salt and 1/4 tsp pepper); mix well.
Pour the egg mixture evenly on top of the veggies in the pan. It looks like you aren’t adding enough eggs but trust me, you are!
Bake for 1 hour then let the pan rest for 10 minutes before serving.

1 1/2 Grilled sausage, chopped

Salt, to taste
