Avocado and Tomato Salad with Corn

Last week it felt like spring had finally sprung ๐ŸŒท๐ŸŒท๐ŸŒท

Again, I pounced on the BBQ!!!ย  To be honest though, I get more excited about the sides then I do the protein.ย  AND…. What screams spring/summer heat ๐ŸŒž๐ŸŒž๐ŸŒž like avocado?ย  Nothing, that’s what!

 

I’m totally bummed right now though because this last week has felt like a cold November โ˜”๏ธ๐Ÿ’ฆ๐Ÿ’ฆ. At least it’s not snow though ๐ŸŒจโ˜ƒ๐ŸŒจ

Avocado and Tomato Salad with Corn

Ingredients

Scale

2 tbsp extra virgin olive oil

1 tbsp cider vinegar

1 tsp honey mustard

1/2 tsp salt

1/2 tsp pepper

1 Large tomato, cut in large chunks

2 Medium avocados, cut in large chunks

1 Cup corn kernels (I used frozen)

2 green onions, sliced


Instructions

In a large bowl, whisk together the olive oil, vinegar, mustard, salt and pepper.

Add in the tomato chunks, avocado chunks, corn and green onion; gently mix to ensure all the veggies are evenly dressed.

Taste and adjust seasoning.

Serve immediately.

  • Prep Time: 5 minutes
