Avocado and Tomato Salad with Corn
Last week it felt like spring had finally sprung 🌷🌷🌷
Again, I pounced on the BBQ!!! To be honest though, I get more excited about the sides then I do the protein. AND…. What screams spring/summer heat 🌞🌞🌞 like avocado? Nothing, that’s what!

2 tbsp extra virgin olive oil
1 tbsp cider vinegar
1 tsp honey mustard
1/2 tsp salt
1/2 tsp pepper
1 Large tomato, cut in large chunks
2 Medium avocados, cut in large chunks
1 Cup corn kernels (I used frozen)
2 green onions, sliced
In a large bowl, whisk together the olive oil, vinegar, mustard, salt and pepper.
Add in the tomato chunks, avocado chunks, corn and green onion; gently mix to ensure all the veggies are evenly dressed.
Taste and adjust seasoning.
