Asian Style Vegetable Stir Fry

This is a dish I came up with when I was craving stir fry AND bbq.  It was the perfect compromise!  I had stir fried veggies with a steak 🙂

What’s really cool here is the fact that when I steamed the broccoli in the stock, the stock evaporated when the broccoli was cooked and it coated the veggie in an amazing crust.

As I sit here writing this I already know I’m making this for dinner tonight!

This is how you make it:

Bring the stock to a boil and then add in the broccoli; steam 5 minutes in stock then set aside (the stock will evaporate after 4-5 minutes).

Add the oil to the pan and then sauté the veggies over high heat for 2 minutes; season the veggies with salt and pepper.

Add in the cooked broccoli, the garlic, soy sauce and sesame oil, mix well and sauté for another minute shaking the pan constantly.

Transfer the veggies to a serving plate and top with the green onion.

Asian Style Vegetable Stir Fry

Description

This is a super easy recipe for crunchy veggies coated in a sweet and salty sauce, a perfect side dish for a busy weeknight with any protein 🙂 

 


Ingredients

Scale

1 Cup sodium-reduced stock

1 Bunch of broccoli, florets only

1 tbsp Canola oil 

1 Large red pepper, sliced

1 Celery stalk, sliced

1 Small onion, sliced into sticks

Salt, to taste

Pepper, to taste

2 Cloves of garlic 

2 tbsp sodium-reduced soy sauce 

5 drops/1/2 tsp sesame oil

1 Green onion, sliced for garnish 


Instructions

Notes

  1. Go with whatever stock you prefer; I went with beef but to make this vegetarian, go with veggie stock.
  2. Serve with rice or any other yummy starch 🙂
