Classic Pasta Salad

Just in time for a snow storm a long weekend BBQ (we have a long weekend this weekend in Canada!).  So I think we can all safely pack away our parkas until next winter (knock on wood).  Anyway so in honour of the long weekend where we plant our flowers and fresh herbs and take out the lawn furniture, here is a healthy take on the traditional pasta salad.   I have to point out that Mike is a pasta salad aficionado and he loved it!  Yup, even with whole wheat macaroni, Mike LOVED it!

Serves 8 – 10

¾ Cup fat free sour cream

¼ Cup light mayonnaise

¼ Cup white vinegar

2 tbsp white sugar

2 tbsp yellow prepared mustard

1 tsp salt

½ tsp pepper

1 Medium red onion, chopped

½ Medium red pepper, chopped

½ Medium green pepper, chopped

2 Stalks celery, chopped

375 g (3 cups) whole wheat macaroni, cooked according to package direction and then run under cold water and drained

In a large bowl, whisk together the sour cream, mayonnaise, vinegar, sugar, mustard, salt and pepper.

Once the dressing is well combined, add in all the veggies and the macaroni.

Mix well and then refrigerate for at least an hour before serving.

Taste and adjust seasoning.
