Chunky Guacamole
Party Season is coming up and I’m starting to plan early; if you have a few killer healthy recipes you’ll (hopefully) escape the 5-pound holiday cheer!
Serves 4 -6
The juice of one lime
¼ Cup fat free sour cream
3 Green onions (scallions), sliced (reserve a few slices for garnish)
¼ tsp cumin
¼ tsp salt
¼ tsp pepper
2 Medium avocados, flesh removed and chopped into large chunks
1 Medium tomato, cut into large chunks
Mix the lime juice, sour cream, onions, cumin, salt and pepper and mix well; taste and adjust seasoning.
Mix the avocado and tomato chunks in a bowl and then dollop the sour cream mixture on top.
Garnish with a few of the reserved green onions.
Notes:
- To remove the flesh from the avocado, slice it in half lengthwise. Then remove the pit with a sharp knife (hit the pit with the blade of knife near the base, it will stick, then turn the knife and the pit will come out).
- I dollop the sauce rather than coating the avocado because I didn’t want it to break down.
- Feel free to garnish with cilantro (yuck!).
