Beef and Broccoli

This is one of those dishes I had heard about time and time again, thinking this was difficult. I love this dish. It’s easy and delicious and it comes together in minutes. This is perfect for this time of year because it’s fast, healthy and full of protein. Why is this seasonal you ask? Well odds are there is someone thinking New Year’s resolution, everyone is really busy shopping for a great deal and if you’re anything like me then you’re over all of the turkey leftovers!

Description

A recipe for the classic Chinese take-out dish everyone loves with lean beef, tender broccoli and crunchy veggies 🙂


Ingredients

Scale

2 Cups cooked rice (1 Cup uncooked, prepared according to package directions)

4 tbsp Sodium-reduced Soy Sauce

1 tbsp Hoison sauce

½ Cup sodium-reduced Beef stock

¼ Cup cold water

5 Dashes sesame oil

2 tbsp brown sugar

1 tbsp cornstarch

1 tbsp extra virgin olive oil

1 pound (about 453g) sirloin or flank steak, sliced thinly across the grain

1 Medium onion, sliced into wedges

1 inch fresh ginger, grated

3 Cloves garlic, crushed

1 Bunch broccoli, broken up into florets

2 Green onions, sliced

Salt, to taste

Pepper, to taste


Instructions

Prepare and cook the rice according to package directions.

Meanwhile:

Combine the soy sauce, hoisin sauce, stock, water, sesame oil, brown sugar and cornstarch; mix well and set aside.

Heat a wok or deep skillet over high heat and add the olive oil. When it’s hot (it will ripple) add the beef and onion; season lightly with salt and pepper.

Sauté for 2 minutes and then add the broccoli, again lightly season with salt and pepper.

Cook for another 2 minutes, the broccoli should be bright green at this point.

Add the ginger and garlic, sauté for about a minute and then add the soy mixture.

Let the mixture boil until the desired consistency; about a minute.

Taste and adjust seasoning.

Serve over rice and garnish with the green onion.

Notes

  1. Alway opt for sodium-reduced ingredients when you can.
  2. The ingredients are high in sodium but you’ll need to lightly season as you cook.
